BRUNCH - bacon pie


Bacon, cheese, and egg bake up into a delicious quiche-like dish: without the hassle of making a crust!
Shredded Swiss is hard to find. Try buying a solid block and shredding by hand, or getting very thin slices from the deli and chopping them up. Cheddar or PepperJack would be tasty too. I'm sure you could replace the bacon with ham, sausage , or even vegetables (roasted zucchini, tomato, mushroom) as well. Be creative.
Bacon Pie

2 pounds bacon, fully cooked and crumbled
2 cups shredded Swiss cheese
2/3 cup chopped onion
1 cup Bisquick (or substitute - recipe below)
2 cups milk
1/4 tsp pepper
4 eggs

Combine bacon, cheese, and onion
Spread into greased 13 x 9 pan
Stir remaining ingredients until mixed and no longer lumpy
Pour into pan over bacon mixture
Bake (uncovered) at 400 for 40 minutes, until knife inserted in center comes out clean
Let rest 5 minutes before serving
can be made the night before and reheated before serving
Bisquick Substitue
4 cups flour
3/4 cups powdered milk
1/8 cup baking powder
3/4 cup shortening
combine all ingredients
store in refrigerator
