BRUNCH - Thanksgiving Casserole



This easy casserole is a good choice for people who want something a little heartier on their plates. It's also a great way to use up any leftover meat/veggies/potatoes you have in your fridge.

Thanksgiving Casserole

1 box Stove Top stuffing for chicken

2 cups cooked chicken, cut into 1/2" cubes

1 pound frozen mixed vegetables (peas/carrot/corn/green bean)

1/4 cup chopped onion

2 cans (10.75 oz each) cream of chicken soup

4 cups creamy mashed potatoes

1/4 cup grated parmesan cheese

prepare stuffing according to directions on box

press into bottom of greased 13 x 9 pan

combine chicken, vegetables, onion, and soup in a bowl (add some milk if it looks too thick)

spread chicken mix over the stuffing

spread potatoes over the chicken mix

cover and bake at 350 for 30 minutes

uncover

sprinkle parmesan cheese over potatoes

bake an additional 15 minutes or until heated through

really? for BRUNCH?? sounds a bit heavy...

Well, yes, it can be a bit heavy (and I did "advertise" it as being hearty) but some people need to have more than just light brunch food to fill them up. Others may just serve themselves a fork-full to get just to get a taste.
